Stoner's Special Lemon Bars

Ingredients:

 

3/4 cup (1.5 sticks) canna butter

1.5 cup flour (if you're really daring, try substituting cannabis flour from our recipe on this site for regular flour)

2/3 cup confectioner's sugar

3 large eggs

1.5 cups cane sugar

3 tbsp. flour (separate from the other flour)

1/4 cup lemon juice (fresh squeezed is optimal)

1/3 cup confectioner's sugar (used for topping final product)

 

Directions:

 

First, preheat the oven to 375 degrees F and grease or butter a 9 x 13 baking pan. In a medium mixing bowl mix together the 1.5 cups flour, 2/3 cup confectioner's sugar and canna butter until blended thoroughly. After it's thoroughly mixed press it into the greased or buttered pan so that it is even throughout the pan and place in the oven to bake for 20 minutes. While it's in the oven mix the cane sugar, eggs, remaining flour and lemon juice. Don't be alarmed if it looks frothy or slushy, it's supposed to appear that way. When the crust is done, pour this mixture over the still-hot crust. It helps to time mixing the remaining ingredients so that you are done mixing them close to the end of the 20 minutes. Once you pour the mixture in the crust, place back into the oven for an additional 20 - 25 minutes or until it is slightly golden brown. Take out after the time is up, let cool on a wire rack and while it's cooling but still warm, sprinkle the remaining confectioner's sugar on top, if desired. Enjoy and try not to eat them all at once.
